08/21/2007: "Kahlua Cake"
I first tried this cake about three years ago and fell in love instantly. I was very surprised that it contained alcohol because what it really tasted like was just a really moist and delicious chocolate cake. I asked for the recipe...which was graciously given to me...and I have been making the recipe ever since. It never beats the first time I tasted it, but comes pretty close. The last time I made this, I have to admit I didn't quite care for it. But that was because I ran out of vodka...but if you follow the recipe to the T...you should yield fool proof results!!

Kahlua Cake
Ingredients:
1 box Betty Crocker SuperMoist yellow cake mix
(or any yellow cake mix with pudding in the mix)
4 eggs (add eggs last)
½ cup oil
½ cup water
¼ cup Kahlua
¼ cup Vodka
1 small box instant chocolate pudding
Method:
Mix all of the above with electric mixer until well blended. Bake at 350 degrees.
30-40 minutes for 2-lb. loaf pans
20-30 minutes for 1-lb. baby loaf pans
50 minutes for 9 x 13 pan
** 1 recipe will yield three 2-lb. loaf pans
or seven 1-lb. baby loaf pans
or one 9 x 13 pan
Cakes are done when inserted toothpick comes out clean.
Glaze
Bring to boil:
1 block margarine (½ cup)
1 cup sugar
¼ cup water
2 T. Kahlua
2 T. Vodka
Spoon glaze HOT Kahlua cakes.
Yield: Enough glaze for 3 2-lb. loaf pans, 7 1-lb. loaf pans, or 1 9 x 13 pan.
