Hi, thanks for visiting my blog! Now that I have webspace and a handy camera, I hope to update this quite a bit with tasty morsels of food. This blog will include commentary and pictures of restaurants I eat at plus recipes and pictures of foods I make! I will try to make the posts as detailed as possible so I hope you all will enjoy it.

09/10/2007: "Miso Braised Chicken"


As promised, here is the second recipe from the fresh bamboos! I definitely prefer this recipe over the miso dressed bamboo shoots, but still gave the majority to Aileen. This recipe goes very well with a nice bowl of hot white rice. smile

Miso Braised Chicken

1 C Bamboo Shoots, prepared and sliced
4 Dried shiitake mushrooms, soaked in hot water for an hour - diced
1 C Chicken Thigh meat
3/4 C Carrots
1/4 C Green Onions, sliced
1 T Cooking Oil
2 T Miso
2 t Sugar
2 t Sake
2 t Mirin
10 T Water

Directions:
Saute the chicken in the oil. Add the shiitake, bamboo shoots and carrots. Combine sugar, sake and mirin and add to the pan. Cook for about ten minutes, stirring occasionally. Add the green onion and cook for about a minute more.

Finished product.



Fresh bamboo shoots taste distinctly different from canned bamboo shoots. The texture in the fresh shoots is crisp and crunchy...while canned shoots are soft and flacid. I definitely recommend fresh bamboo shoots over canned ones (no brainer right?). If anyone is willing to, please share any recipes that include bamboo shoots!
